Quinoa Stuffed Tomato with Salmon





This is actually my first time posting photos with my new camera. I recently purchased the Canon 700d which I absolutely love. Please be patient while I get used to using it though. The 700d takes beautiful photos. I am still using my trusty iPhone 5 to takes photos, but as a keen lover of taking photographs I wanted to treat myself to a nice camera. I will be doing a blog post soon on the 700d. I really hope you like my photos.

I have recently purchased a copy of Ella's book Deliciously Ella, (blog post to come.) There are so many amazing and beautiful photos in the book and I seriously can't wait to start making them. I've been trying to keep up with he healthy eating, I think I'm doing quite well, although there has been a couple of slip ups where I literally stuffed a whole dairy, wheat and gluten free chocolate cupcake in to my mouth. It wasn't a pretty sight but oh my, how good it tasted! I feel it's always good to treat ourselves now and again, Ive since realised that when I devoured a whole chocolate cupcake, on more than one occasion. I've also started going for walks and I hope to get the bike out again soon, as the last time I actually went somewhere on my bike was about 10 years ago! (Yes that's right, 10 years ago.)

I am a huge fan of tomatoes and I eat them just about every day. I've never actually tried a beef tomato. (A beef tomato is a very big tomato and tastes delicious.) As I love quinoa, I thought it's only fair that I stuff the tomato with the quinoa. I decided to put some salmon with it and which created the perfect meal that tastes amazing. First, cutting a circle on top of the tomato, I then scooped out some of the middle, which can get quite messy if your not careful! After doing that I then popped the beef tomato in the oven whilst I cooked quinoa in a pan and cooked the salmon so everything was cooked together and done at the same time. I have really been loving quinoa lately, it tastes delicious. Usually when I cook mine, I pop it in a pan with boiling water and then pop in some coconut oil as it really add thats little bit more flavour and sprinkle some salt in to the pan too. That is how I cook my pasta so I thought why not quinoa too.

Lighten Up: Summer Sleep Essentials

As the whether starts to get warmer and the evenings become lighter, I love brightening up my room, whether it being new bed covers, flowers, even rearranging my room. I feel that by doing this it makes me feel more ready for summer. I love bright colours, so adding them to my room really brightens my mood. Below is some of my summer sleep essentials mixed with a little bit of DIY that I have been doing.

I have a bit of an obsession when it comes to duvet covers. When I go into a shop I'm always looking to see what covers and sheets they have. I love a nice floral one, the one I currently have on my bed at the moment has pretty pink flowers with little butterflies. If your looking for some new bed covers and sheets, I'm really loving this luxury bedding by Parachute. I also like to have cushions on my bed as they always make me feel cosy whilst laying in bed. Usually during the winter I have blankets on hand for those cold evenings, so it's nice to be able to take those off for those warm summer evenings. 

To get myself more in the summer mood I have been doing a little DIY with some old furniture and gave it a make over. You may remember one of my previous posts where I painted a second hand desk that only cost a few pounds and painted it white. I've also places some artificial flowers in a pretty little vase and also popped on these super cute cake tins. My mum also found me an old chair that goes perfect with the desk.  I also decided to give my TV cabinet some paint. Just by doing these few simple things, it has really brightened up my room. 

I always have a book or two beside me as (being a huge book lover) I love to read. I'm currently reading Inkspell by Cornelia Funke. I also have Love.Life.Beauty by Keegan Allen, (from Pretty Little Liars) His book is filled with so many beautiful photos. I especially love having book beside me during those warm summer evenings when you just can't get to sleep. I find reading very relaxing.

Giveaway - All My Secrets by Sophie McKenzie

Being the huge book lover I am, I was so happy when I *received All My Secrets by Sophie McKenzie to read. Sophie McKenzie published her award-winning debut, Girl, Missing, in 2006. Sophie had won lots of awards including national and regional book awards. Sophie has also been  a featured World Book Day author twice selling over 1 million books worldwide. Sophie's first book for adults, Close My Eyes, was a Richard and Judy Book Club choice. 

All My Secrets is a brilliant book, and brilliantly written. From the first page I wanted to know more and was asking myself all sorts of questions. Evie suddenly learns the shocking truth about her family and also learns that she has inherited a lot of money (a lot of money.) Everything is a bit too much for Evie to take in straight away. Evie is then sent to an Island to go on a young adult development programme, but mysterious things start to happen. Oh, and Kit and Josh, well, you need to read the book to find out more about these two. I love it when a book really draws you in from the beginning. Whilst reading the book I felt very close to the characters and felt the emotions they felt, as there are so many different emotions felt within in this book. You can really relate to the characters, with going through life and finding out things you never knew before. I hope that there is a sequel as I really want to find out what happens next (Not giving anything away.) This is definitely a must a must read for 2015. I can't wait to read more of Sophie McKenzie's books, especially Close My Eyes.

Vegetable Pasty | Dairy, Wheat and Gluten Free


I love baking, I find it very relaxing, or is it just me! I love being able to find new recipes and then make them. I'm a huge fan of Pinterest and I've been getting a lot of inspiration from there for recipes. I have so many I want to make. You can follow me on Pinterest by clicking here. I have so many recipes in my recipe inspiration board. I love being nosy and seeing what other people have been baking. I recently made a banana bread loaf which tastes amazing, so watch this space, I wanted to test it out first before posting it on here. I've also been getting a lot of inspiration from Ella's blog Deliciously Ella. Ella has a recipe on there to make your own dairy, gluten and wheat free chocolate with almond butter in the centre. They look so good and I really want to try making my own. I also like a challenge, a lot recipes I have looked at are not dairy, wheat and gluten free, so I love being able to re-create them and make them free from. Another recipe that I really want to try is making my own waffles. But first I need to get a waffle maker, so thats on the list. 

You may remember my previous post using Udi's Pastry Mix when I made these delicious Jam Tarts. I saved some of the pastry mix so I could use it to make something else. Since becoming dairy, wheat and gluten I have often missed have a pasty, so I thought why not make my own using the Udi's Pastry Mix. They taste so delicious and  I decided to fill mine with potato, courgette and mushroom. I followed the instructions on the box on how to make the pastry, then once rolled out I cut the pastry mix in to circles for the pasty shape, I then popped on my filling and folded the pastry to create the pasty and then I put them in oven. I can't wait to get some more of this pastry mix as I have so many different ideas for recipes that I can use it for.

Dork Diaries, Drama Queen

As a huge book lover I am obsessed with books, from a very young age I have loved to read. *I was recently sent a copy of Dork Diaries, Drama Queen by Rachel Renee Russell to review. I love to be able to help out and as I am very passionate about books, I love to review books. Here is a little bit about the series and the author -

"The series has appeared on the New York Times bestseller top ten non-stop for over a year and the series has over 13 million copies in print worldwide. The books, which are the personal diary of 14 year old Nikki Maxwell feature drawings, doodles and comic strips that chronicle the daily drama in her life.
Rachel Renee Russell has said that this series was inspired by her own middle school experiences, as well as those of her two daughters, Erin and Nikki. Her older daughter, Erin, helps with writing the Dork Diaries series and her younger daughter, Nikki, helps with illustrations."

This book is brilliantly written and I love the doodles, fun illustrations and comic strips. I also love that Rachel's two daughters help out with the Dork Diaries series, with the writing and the illustration, it really gives it a much more personal touch to the book. This book is fantastic for the younger reader and especially of the same age as the characters in the book who are going through middle school. Mean girl Mackenzie has stolen Nikki's diary and through this book we follow Mackenzie as Dork Diaries takes a twist. But reading Nikki's diary isn't the only thing that mean girl Mackenzie is interested in. I have really enjoyed reading Dork Diaries, Drama Queen, I'm not going to give too much away as it's a book you really do need to read. I personally can't wait for the next book to come out as I really want to know what happens next. As you can see in the photo above how eye catching the front cover of the book is, I absolutely love it. I love a good front cover on a book as it's the first thing I notice when looking at a new book. 

The other books in the Dork Diaries series all look so good, and their are so many great reviews on the whole series and I've read how people can really relate to these books and how they are helping them. I feel this is so important when a book can do this and is very valuable. There are so many different topics within this book that you can really relate to and I personally relate to during my time at school. The book goes through different issues that currently effect younger people who are at middle school, such as boyfriends, first kiss, school bullies and general every day to day school life.

Batiste Dry Shampoo | Eden

I am a huge fan of dry shampoos but my favourite brand to use is definitely Batiste. I have wrote this blog post purely because I love their products. I previously wrote about one of their dry shampoos a while back and I recently discovered this new limited edition one a couple of weeks ago. This is the Eden dry shampoo and has a sugar melon and honeysuckle scent. I am obsessed with the smell of this one, as soon as I sprayed I could smell the sweetness of the ingredients and the smell lasts all day. I love it. Another reason why I love this one, as you have already probably guessed, is the design on the bottle, how cute are those birds and flowers. The bottle is gorgeous. I'm 100% going to be stocking up on this. I just hope that they will still continue to do this one. I just can't get over how good it smells. As like the other Batiste dry shampoos, this one really helps my hair to keep looking nice and fresh, whilst making it smell so good. I've tried a lot of dry shampoos over the years but I have always gone back to Batiste, and I'm not just saying that. They always usually have some type of offer on them too so they are a great buy and a bottle usually lasts me quite a long while as a little goes a long way.

2 Ingredient Pancakes

I am obsessed with these banana pancakes and the best thing about these is that all you need is two ingredients - 

1 Banana,
2 Eggs.

They are so quick and easy to make and taste so good. I first found out about this recipe on Cassey Ho's Youtube channel, Blogilates. I have been obsessed with this recipe ever since. Firstly I get 1 ripe banana and mash it in bowl with a fork until it is all mushy and then pop 2 eggs in to the bowl and mix everything up. Next I like to cook using Coconut oil in a pan, I find the coconut oil adds that extra something when cooking and makes food taste even more delicious. But you can use whatever oil you like. Next I pop the mixture in to the pan, as you can see int he photo above the mixture makes 3 nice sized pancakes. I also like to put a little syrup on mine to add that extra sweetness and some blueberries. These pancakes are dairy, wheat and gluten free. I love that these pancakes only have two ingredients as I like to know what I am actually eating and I know exactly what I have put in them. They are so delicious and are great for breakfast.

Peanut Butter and Chocolate Chip Cookies | Dairy, Wheat and Gluten Free

These peanut butter and chocolate chip cookies are so delicious and very addictive! They are really simple and easy to make and are dairy, wheat and gluten free. All you need is -  

200 g caster sugar
200 g gluten-free plain flour
100g of peanut butter 
2 eggs
1 small pack of dairy free chocolate drops.

To make these I actually found it works better if you just mix all of the ingredients together in a bowl in no particular order! I was just experimenting around and found they turn out crunchier if I did this. After doing this I popped the mixture in to a baking tray. Rather than doing cookie shapes I just spread the mixture out. After about 20 minutes or so (or when they look nice and golden and crunchy) I popped the tray out of the oven, left to cool and then just cut them in to cookies. Not your typical cookie shape, but I find that by doing this you can have a lot more cookies, depending how big or small you want them. They are great to have as a snack or to pop in to your lunch box.
